The Opportunity:

The Senior Manager of Food & Beverage Services is responsible for management and oversight of the university’s food and beverage services program. The Senior Manager works collaboratively with business partners for food services, beverage/pouring rights, and snack vending to create and maintain excellence in the dining experience for students and the university community. This position is also responsible for contract management, visioning, and successful program implementation, ensuring effectiveness in all areas of operations including food quality, menu variety, program development, facilities, and customer services. The Senior Manager is part of a team of professionals in Business Services who are responsible for management and oversight of business and service units that provide essential services to students, faculty, and staff.

Responsibilities:

  • Provide leadership in maintaining highest standards of food quality, operations, and customer services.

  • Responsible for contract management including oversight of operations and financial performance of business partners.

  • Maintain thorough knowledge of and manage contracts to ensure timely and complete contract fulfillment by business partners.

  • Ensure compliance with key performance indicators (KPI’s) and other accountability measures. Ensure deficiencies are addressed promptly and update KPI’s as needed.

  • Perform reviews, data analysis, inspections, and observations of providers’ daily operations and performance including customer service, cleanliness, safety, food quality, and hours of operation.

  • Meet regularly with key stakeholders to set goals, plan, review, and ensure successful achievement of excellence in operations.

  • Develop, implement, and interpret campus-wide policies for catering services including exemptions and restrictions.

  • Monitor satisfaction levels with food services program including catering. Develop and utilize various methods for determining satisfaction levels including but not limited to surveys, sales records, social media, and focus groups.

  • Work with dining services provider on initiatives that are consistent with excellence in operations and leading-edge practices in dining services.

  • Analyze financial reports and supporting documentation for sales, commissions, and payments.

  • Ensure health and sanitation inspections are timely; ensure effective pest control.

  • Serve as primary contact for Business Services for projects to internal and external entities including architects, contractors, Environmental Health and Safety, and others as needed.

  • Attend project meetings, perform inspections, and ensure compliance with university requirements and expectations.

  • Ensure sustainability measures are incorporated into project planning, design, and construction.

  • Develop innovative programs and solutions that enhance services and keep UCF on the cutting edge in food and beverage services.

  • Work with Emergency Management on plan development and implementation of crisis food service operations.

  • Conduct research and assessment of services and programs.

  • Perform data analysis and ensure utilization of findings to improve or enhance services.

  • Compile reports and provide information to support and inform management decisions and organization goals.

Minimum Qualifications:

Bachelor’s or Master’s degree and 8+ years of relevant experience or an equivalent combination of education and experience pursuant to Fla. Stat. 112.219(6) . 

Preferred Qualifications:

  • Industry knowledge and experience related to food service operations in an educational environment.

  • Familiarity with retail food service to include both national brand and non-national brand concepts.

  • Extensive understanding on service levels, staffing levels, hours of operation and food quality assessment are important for delivering a robust and effective operation.

  • Knowledge of dining services financial operations and systems.

  • Ability of maintain effective collaborative relationships with business partners including regular communications and on-going accessibility.

Position requires a valid driver’s license. The position may involve driving to various locations on and off campus to conduct University business.
