JOB DESCRIPTION:

  • Prepares food for study subjects according to the study-specific recipes and study protocol.
  • Supports the bionutrition manager in the operation of the bionutrition metabolic kitchen.
  • Inventories and orders food and supplies maintaining an adequate and safe supply using the FIFO method.
  • Supervises and assists in the production and delivery of research meals.
  • Cooks and prepares a variety of food according to production guidelines and study-specific recipes.
  • Communicates with the manager if there are any issues or concerns.
  • Bakes, roasts, broils, steams, and uses a variety of cooking methods on meat, vegetables, starches, and other foods.
  • Inspects and tastes food for palatability and correct temperature.
  • Sets up the workstation with necessary ingredients and equipment.
  • Prepares ingredients by measuring, weighing, mixing, chopping, trimming, and peeling food items.
  • Keeps records of quantities produced and used in accordance with established procedures.
  • Safely utilizes a variety of utensils including knives.
  • Operates a variety of equipment including ovens, stoves, mixers, scales, etc.
  • Records daily refrigerator/freezer temperatures.
  • Arranges, portions and weighs food according to established study guidelines.
  • Cleans, sanitizes and maintains work areas, equipment and utensils.
  • May clean and wash dishes as needed.
  • Maintains food safety and sanitation standards, monitors quality assurance and quality control.
  • Uses required protection devices to prevent transmission of food borne illnesses to patients, customers, and staff. 
  • Reports safety hazards.
  • Adheres to county, state, and federal regulatory agency requirements.
  • Performs basic nutrition support functions including entry and verification of recipes, nutrient analysis, formula orders.
  • Maintains excellent customer service and positive attitude towards study staff, study participants, co-workers, etc.
  • Maintaining communication among dietitians and research staff.
  • Ensures security of the metabolic kitchen and reports any unusual change in food or supplies inventory.
  • Works with the bionutrition manager on the professional development plan for maintaining and expanding skills and knowledge. This includes attending professional meetings and activities. Sharing new ideas with the manager and team.
  • May conduct other nutrition support functions under the supervision of an RD.
  • Other duties and tasks as assigned by the bionutrition kitchen manager.

MINIMUM QUALIFICATIONS:

  • A high school diploma or equivalent preferred.
  • Must be able to read, write, and follow instructions.
  • Two years of institutional food preparation or cooking experience OR completion of a two-year culinary degree/certification.
  • SERVSafe Safe Food Handler Certification to be in place or will plan to get within 90 days of employment
